Shrimp Gumbo
(Serves 4)

Step One:
Ingredients:
1 cup green peppers, diced
½ cup onions, chopped
½ cup celery, chopped
1/3 cup red peppers, diced
pinch dry oregano
pinch dry thyme
½ teaspoon gumbo file
2 tablespoons margarine

Method:
Cook above ingredients over medium heat for ten minutes.

Step Two:
Ingredients:
1 cup okra, diced (fresh or frozen)
1 medium tomato, diced
6 ounces clam juice
6 ounces tomato juice
pinch cayenne pepper
2 tablespoons chicken base
pinch cracked black pepper
1 teaspoon garlic, chopped

Method:
Add the above ingredients to the green pepper-onion mixture and bring to a boil. Cook for ten minutes, then add the following (except for shrimp):

Ingredients:
3 tablespoons cooking sherry
dash of Worcestershire sauce
1 teaspoon fresh parsley, chopped
roux (2 tablespoons flour & 1 tablespoon butter, cooked over medium high heat until light brown)
¾ pound 26/30 shrimp, raw, peeled & deveined

Method:
Reduce heat to medium low and cook for 7 minutes. Add shrimp and cook for an additional 6 minutes.
Serve immediately in large bowls and garnish with rice.
