Salmon Salad Sandwich (Serves 2) |

Ingredients: 8 ounces of salmon, poached 2 tablespoons mayonnaise 1 tablespoon red onion, chopped 1 tablespoon celery, chopped tablespoon fresh dill, chopped 2 tablespoons cucumber, peeled, seeded and chopped 1 tablespoon black olives, chopped salt and pepper to taste sourdough or wheat bread, toasted lettuce and sliced tomato as desired. Method: Combine all of the above ingredients except the salmon. Flake the salmon into the mixture but don't over-mix! If you would prefer a salad instead of a sandwich, you may serve the mixture on top of the following: Combine the following: Mixed salad greens 2 tablespoons olive oil 2 tablespoons tarragon vinegar 1 tablespoon whole grain mustard tablespoon parsley, chopped 1 tablespoon shallots, chopped teaspoon cracked black pepper ««« Back to Recipe Search page |
