Salmon Caesar Salad-Market Street
(Serves 1)

Ingredients:
1  4-5 ounce fresh salmon filet – grilled, poached or broiled
3 cups Romaine
1/4 cup fresh shredded Parmesan or Romano Cheese
1/2 cup croutons
Market Street Caesar dressing

Method:
Toss together the Romaine with the shredded Parmesan or Romano cheese, the croutons, and 2 ounces of Market Street Caesar Dressing. Spoon onto a serving plate, top with the salmon filet and serve.

Market Street Caesar Dressing:
(Yield: 2 quarts)
1 quart mayonnaise
1 quart sour cream
1 cup red wine vinegar
2 ounces Worcestershire sauce
2 tablespoon anchovy paste or minced anchovy
2 tablespoons fresh garlic, minced
1/3 cup sherry or sherry vinegar
1 tablespoon cracked black pepper
1 teaspoon salt
dash of Tabasco


Method:
Combine ingredients and mix well. Dressing can be stored, covered, in the refrigerator for up to 10 days.
