Shrimp Louie (Serves 1) |

Ingredients: Mixed greens 6 ounces crab meat, 6 ounces gulf shrimp (tail removed), or 6 ounces bay shrimp 1 egg, hard boiled and cut in half 1/2 avocado capers to taste 3 tomato wedges 2 spears asparagus 1 lemon wedge 3-4 ripe olives Method: Place the mixed greens onto a serving plate and spoon the seafood on top. Around the perimeter of the serving plate, place the two halves of the egg (yolk sides up), tomato wedges, and avocado. Garnish with the asparagus spears, lemon wedge, and olives.
