Salmon-Wild Alaska Louie (Serves 1) |

Ingredients: (1) 6-7 ounce wild Alaska salmon filet - broiled, poached, or sautéed 1 hard-boiled egg, cut in half 1/2 Roma tomato, cut into 4 slices 2 spears fresh asparagus, cooked 1/2 ripe avocado 4 whole pitted olives 2 tablespoons capers 3 ounces Thousand Island Dressing 2 cups chopped salad greens Method: Place the greens on a serving plate and top with the salmon filet. Around the perimeter of the serving plate, place the two halves of the hard boiled egg (yolk sides up), tomato wedges, and the avocado. Garnish with the asparagus spears, capers, and olives.
