Chicken Salad with Orange-Soy Vinaigrette
(Serves 2)

Orange-Soy Vinaigrette ingredients:
½ cup soy sauce
½ cup fresh squeezed orange juice
2 tablespoons orange zest
1 tablespoon cornstarch
2 tablespoons toasted sesame seeds


Marinade ingredients:
2 tablespoons orange zest
½ teaspoon black pepper
¼ cup vegetable oil
pinch of salt


Salad ingredients:
2 6-8 ounce chicken breasts, boneless and skinless
mixed greens
tomatoes
fresh asparagus
mushrooms, sliced or quartered


Method:
Mix together the vinaigrette ingredients and set aside.

Mix together the marinade ingredients, and marinate the chicken for 2 hours in the refrigerator. Remove the chicken from the refrigerator and grill for 3 minutes on each side. Remove from heat and slice.


To Serve:
Place the greens on individual serving plates, top with slices of chicken, tomatoes, fresh steamed asparagus spears and tomatoes. Toss with vinaigrette and serve.
