Grilled Portabella Mushroom Sandwich (Serves 2) |

Ingredients: 2 Portabella mushrooms 2 whole wheat buns 1 large yellow tomato, sliced 1 large red tomato, sliced 4 slices Swiss cheese 3 tablespoons mayonnaise 4 leaves butter leaf lettuce 2 tablespoons vegetable oil Pinch salt Pinch pepper Method: Lightly oil the mushrooms on both sides with vegetable oil. Season with salt and pepper. In a heavy pan over medium heat, or over a barbecue, place oiled mushrooms and cook for 5 minutes on each side, turning often. Remove from heat. Place Swiss cheese slices on top of mushrooms one minute before serving. Garnish whole-wheat buns with mayonnaise, tomatoes and lettuce. Add mushrooms and serve. ««« Back to Recipe Search page |
