Broiled Mahi Mahi with Pineapple Salsa (Serves 2) |

Mahi Ingredients: 4 8-ounce Mahi Mahi filets Mahi Mahi Method: Grill the filets on an outdoor barbecue for approximately 6 minutes on each side, or until done. Pineapple Salsa Ingredients: 1/2 fresh pineapple with skin and core removed, cut into an 1/8-inch dice 1 red bell pepper, cut into an 1/8-inch dice 2 jalapeno peppers, seeded and chopped very fine 1 bunch cilantro, chopped fine juice of 2 limes Pineapple Salsa Method: Combine all ingredients. To Serve: Place 2 ounces of Pineapple Salsa over each filet. Serve with fresh seasonal vegetables and rice or potatoes. ллл Back to Recipe Search page |
