Lobster and Tomato Fettuccine (Serves 4) |

Ingredients: 6 cups cooked first quality fettuccine noodles 1 pound cooked Maine lobster meat, chopped into bite-sized pieces 1 pint heavy cream 4 tablespoons chilled butter, cut into 6 pieces 4 medium ripe tomatoes, seeded and chopped ½ cup fresh basil, shredded 4 ounces grated Parmesan cheese - optional salt and pepper to taste Method: In a large saucepan, over medium high heat, simmer cream and tomatoes until sauce becomes slightly thickened, about 8 to 10 minutes. Add butter, lobster and basil and continue cooking 4 to 5 minutes more, or until butter is incorporated. Add salt and pepper to taste, if desired. Warm pasta in hot water, drain well, and divide between 4 platters. Pour sauce over pasta and sprinkle with Parmesan cheese. ««« Back to Recipe Search page |
