Barbecued Halibut with Baby Vegetables (Serves 2) |

Ingredients: (2) 6-8 ounce filets of fresh halibut 10 baby carrots, cut in half lengthwise 6 baby zucchini, cut in half lengthwise 6 yellow squash, cut in half lengthwise 6 par boiled red potatoes, cut in half 10 whole green beans 2 tablespoons olive oil 1 clove garlic, crushed 1/2 teaspoon fresh oregano Method: In a non-stick pan, sear the halibut on both sides. Then place the halibut and the vegetables on the grill and cook for 3-4 minutes on each side. Remove the halibut from the grill and set aside. Place the vegetables in a sauté pan over medium-high heat with the olive oil. Add the garlic and oregano and toss with the vegetables while cooking for one minute. To serve: Place the halibut filets on individual serving plates, top with the vegetables and serve. ««« Back to Recipe Search page |
