French Onion Soup
(Serves 2)

Ingredients:
1 cup yellow onions, julienned
1 cup red onions, julienned
2 cups beef stock
1 cup burgundy wine
1 teaspoon cracked black pepper
2 tablespoons butter
4 slices provolone cheese
2 tablespoons Parmesan cheese, grated
2 pieces toast or Crostini

Method:
Using a heavy stock pot, sauté onions in butter until transparent. Add beef stock and wine and simmer over medium-low heat for one hour.
Divide broth into two oven-proof bowls. Place Crostini or toast on broth, cover each with two slices provolone cheese and one tablespoon Parmesan. Cook under the broiler until cheese is melted and soup is piping hot.
