Crab Omelet with Hollandaise Sauce (Serves 2) |

Omelet Ingredients: 6 eggs, beaten 4 ounces snow crabmeat 1/2 avocado 2 tablespoons butter or margarine 1 cup shredded jack cheese tomato slices Hollandaise Sauce Omelet Method: Melt 1 tablespoon of the butter or margarine in a non-stick ovenproof omelet pan over medium heat. Add half of the egg mixture and cook until the eggs begin to fluff. Remove the pan from heat. Turn the omelet over add half of the crab, avocado, and cheese. Place the pan under the broiler for one minute or until the cheese is melted. Remove from oven, fold the omelet in half, place the pan under the broiler for another 30 seconds. Remove the omelet from the pan and place in a covered dish on the bottom rack of the oven to keep warm while preparing the second omelet. Repeat this procedure for the second omelet with the remaining ingredients. Turn the omelets onto serving plates. Garnish with sliced avocado and tomato slices.
