Crab Louie
Serves 1

Ingredients:
Mixed greens
6 ounces crab meat
1 egg, hard-boiled and cut in half
1/2 avocado
capers to taste
3  tomato wedges
2  spears asparagus
1  lemon wedge
3-4 ripe olives

Method:
Place the mixed greens onto a serving plate and spoon the crab on top. Around the edges of the serving plate, place the two halves of the hard-boiled egg (yolk sides up), tomato wedges, and avocado. Garnish with the asparagus spears, lemon wedge, and olives. Louie salads are traditionally served with Thousand Island dressing.
