Lump Crab Louie
 

Ingredients:
1 pound lump crabmeat, canned
cup celery, fine diced
cup red onions, fine diced
1 tablespoon parsley, fine chopped
1/3 cup mayonnaise
salt and fresh black pepper to taste
juice of 1 lemon

Method:
Combine all of the above ingredients by hand and chill for one hour.

Dressing Ingredients:
cup mayonnaise
cup chili sauce
2 tablespoons sweet pickle relish
1 tablespoon black olives, chopped
1 tablespoon green pepper, chopped
pinch of white pepper
dash of Worcestershire sauce

Method:
Combine all of the dressing ingredients by hand and chill for one hour.

Salad Ingredients:
6 cups of your favorite leaf lettuce
1 tomato, quartered
2 hard boiled eggs, halved
4 asparagus spears, blanched &: chilled
1 Hass avocado, pitted, skinned and cut in half
4 black jumbo olives

Method:
Divide salad ingredients into 2 bowls. Place crab mixture on top of salad. Spoon dressing over top and serve.
