Crab Cake Burgers with French Fried Clam Strips
Yield: 6

Ingredients:
1/4 cup melted butter
2 eggs, beaten
2/3 cup sour cream
2 tablespoons fresh parsley, chopped
juice of one lemon
1  tablespoon Worcestershire Sauce 1  teaspoon paprika pinch salt pinch cayenne pepper 2 pounds Maryland Lump Crab 1/2 cup breadcrumbs 6  hamburger buns tartar sauce lettuce leaves embellishments of your choice

Method:
Combine butter, eggs, sour cream, parsley, lemon juice, Worcestershire sauce, paprika, salt, and cayenne in a bowl and mix with a wire whip. Gently fold in the crab and breadcrumbs. Refrigerate for one hour. Shape the crab mixture into 2 ounce cakes. Cook in a medium-hot skillet in 2 tablespoons butter or margarine. Cook until brown, about 4 minutes per side.

To assemble burgers:
Spread tartar sauce on the hamburger buns, adding a lettuce leaf on each burger, along with your favorite embellishments. Serve with French Fried Clam Strips.

French Fried Clam Strips
Serves 2-4

Ingredients:
3/4 pound of clam strips
1/2 cup milk
3  eggs, beaten
2 cups flour
pinch salt
pinch black pepper
canola oil

Method:
Mix the milk and eggs together. Season the flour. Dip the clam strips in the egg mixture and then dredge in the seasoned flour. Cook the clam strips in a skillet or fryer at 350-degrees for no longer than 3 minutes. Drain the clam strips on paper towels. Serve with cocktail sauce.
