Clams
(Serves 2)

Ingredients:
2 pounds clams, thoroughly cleaned
1 cup dry white wine, beer, or water
3 tablespoons shallots, minced
1 tablespoon butter
parsley, minced

Method:
Over high heat, place the clams in a 2-quart saucepan along with the shallots and white wine, beer, or water. When the liquid comes to a boil, add the butter and cook, covered. When the clams open, add the parsley and serve with drawn butter.
