Bluenose Sea Bass with Citrus Salsa
(Serves 2)

Sea Bass ingredients:
2 6-8 ounce sea bass filets

Sea Bass method:
Broil or barbecue the sea bass approximately 8 minutes per side, or until done.

Citrus Salsa ingredients:
2 oranges, peeled and chopped in ¼ inch pieces
½ grapefruit, peeled and chopped in ¼ inch pieces
1 lime, peeled and chopped in ¼ inch pieces
½ yellow bell pepper, chopped
1 red bell pepper, chopped
2 tablespoons fresh cilantro, chopped
3 tablespoons rice wine vinegar
2 tablespoons sugar

Citrus Salsa method:
Combine all ingredients. (Can be stored in the refrigerator in an airtight container up to one week.)

To serve:
Spoon the citrus salsa over the sea bass and serve with rice and fresh vegetables.
