Barbecued Skewers-Beef, Chicken, Shrimp
(Serves 4)

Skewer ingredients:
8 ounces boneless chicken breast, cut in ½ inch wide strips
8 ounces flank steak, cut in ½ inch wide strips
8 large shrimp, peeled and deveined
1 zucchini, sliced diagonally ¼-inch thick
1 yellow squash, sliced diagonally ¼-inch thick
16 8-inch bamboo skewers
Skewer method:
Reserve 4 skewers for each ingredient.

| Chicken Skewers: |
With the bamboo skewer, thread the chicken strips,
accordion style, reserving 2 ounces of chicken for each
skewer.

| Beef Skewers: |
Same as above
|
| Shrimp Skewers: |
Using 2 shrimp per skewer, thread the shrimp onto the
skewer accordion style.
|
| Vegetable Skewers: |
Reserve 2 skewers for the zucchini and 2 for the yellow
squash. Thread the slices onto the skewer tightly.
