Ready-to-Go Barbecue
(Serves 2)

Ingredients:
(1) 3 to 4 pound whole chicken, roasted
1 rack of baby back ribs
1 teaspoon salt
1 teaspoon fresh cracked black pepper
1 teaspoon sage
1 teaspoon thyme

Method:
Combine seasonings and rub over both chicken and ribs. Bake at 325 for 30 minutes. Remove from oven and chill.

Barbecue Sauce Ingredients:
1 cup of your favorite barbecue sauce
1 teaspoon vegetable oil
1 clove garlic, crushed
1 shallot, fine chopped
2 teaspoons celery, fine chopped
2 teaspoons honey
teaspoon Tabasco

Method:
In a heave sauté pan over medium-high heat, add oil, celery, shallots and garlic. Cook for 60 to 90 seconds. Add remaining sauce ingredients and bring to a boil. Remove from heat and chill.

Cut cooled chicken into eighths. Place chicken and ribs in a large Ziplock bag with the sauce and shake until well coated. Take to your picnic and reheat on a barbecue grill until hot.

Serve immediately.
